Triglycerides are compounds consisting of three fatty acids and a glycerol. Triglycerides make up most animal and vegetable fats and are the principal lipids in the blood where they circulate. They are bound to a protein and form High Density Lipoproteins (HDL, the good cholesterol) and Low Density Lipoproteins (LDL, the bad cholesterol). The desirable level of triglycerides in the blood is 200 milligrams per deciliter for adults.

Blood triglyceride levels can be lowered via the diet. A diet lower in fat, alcohol and sugar can lower the level in your blood. Greater intake of fruits, vegetables, and whole grains will lower triglycerides and lower the risk for heart disease.
